Spiced Cucumber and Mint Dip

Similar to Indian raita, this goes very well with spicy foods. It also makes a very good marinade for barbequed chicken, and some fish too.

Ingredients

  • 250g The Dairy House natural wholemilk yoghurt
  • half a cucumber – peeled, sliced in half lengthways, seeds removed
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • bunch of mint, finely chopped
  • salt and pepper

Method

Coarsely grate the cucumber and squeeze out as much liquid as you can with your (clean!) hands.

Stir everything together in a bowl and season generously with salt and pepper.

Cover, and leave in the fridge for at least an hour before serving.
