Spiced Cucumber and Mint DipSimilar to Indian raita, this goes very well with spicy foods. It also makes a very good marinade for barbequed chicken, and some fish too. Ingredients
MethodCoarsely grate the cucumber and squeeze out as much liquid as you can with your (clean!) hands. Stir everything together in a bowl and season generously with salt and pepper. Cover, and leave in the fridge for at least an hour before serving.
